I just googled this recipe and it tasted so good! James rated it 10 out 10...which he has never done before. :)
We had it with wild grain long rice, and spinach topped with walnuts, dried blueberries, blue cheese and fat free raspberry vinaigrette dressing. It was sooo good, and the best part was--SO healthy!
What you need:
1/4 cup of reduced fat Mayo (made with Olive Oil)
2 Tbsp of grated reduced fat Parmesan
1/8 tsp of ground Red Pepper
Salt and Pepper
Dill Weed
4 Salmon Fillets
2 tsp of Lemon Juice
10 Butter crackers
Make it:
Heat oven to 400 F
Mix Mayo, cheese, Salt, Pepper, dill weed into mixture.
Place fish in to shallow foil-lined pan, drizzle with lemon juice, Spread May mixture and cracker crumbs on top
Bake 12 to 15 Minutes or until fish flakes easily with fork.
